Nutrition per serving is worked out from the values per 100 grams of each ingredient in the recipe. Allergies are checked against ingredients: any recipe containing an allergen for someone in the household is left out of the plan, even if that ingredient is optional. Whatever the AI reads from a receipt, you check before it's saved.
